From Ranch to Riviera: Dining Around the World at Latuli

If you’re looking to elevate your next night out with style, soul, and flavor, then I’ve got a new spot for you—and it’s not just a restaurant, it’s an experience.

Latuli, the long-awaited passion project from renowned Chef Bryan Caswell and restaurateur Allison Knight has officially opened its doors in Houston’s Memorial neighborhood—and it’s every bit as stunning, thoughtful, and flavor-packed as we hoped.

Nestled off Gaylord Drive in a lush, tree-framed setting (yes, you’ll forget you’re just minutes from the city), Latuli is an ode to Gulf Coast flavors, Texas ranch traditions, and a well-traveled palate that draws inspiration from around the globe. The name? A sweet tribute to Knight’s three children.

A Space That Tells a Story

Let’s talk design. Latuli is visually striking—thanks to none other than Alfredo Paredes, former SVP and Chief Creative Officer of Ralph Lauren. The design evokes a Mediterranean soul with American roots: think graceful arches, hand-troweled plaster, patinaed metals, and rich woods, all highlighted by walls covered with exquisite art. Every element was carefully chosen to reflect warmth, heritage, and a little Texas bravado.

At the heart of Latuli is Allison Knight’s clear and deeply personal vision. A first-time restaurateur with a background in marketing and hospitality, Knight poured her creativity into every detail—from the family-inspired name (a blend of her children’s names: Lawson, Tucker, and Lillie) to the restaurant’s inviting layout and storytelling touches. She collaborated closely with Alfredo Paredes on the interiors and was hands-on with curating everything from vintage doors to art pieces and cozy textures that reflect her own travels and Texas heritage. Knight describes Latuli as a space “rooted in soul and layered in story”—and it shows.

One of my favorite details? The bar, which serves as a grown-up retreat filled with art celebrating rodeo, fishing, and indigenous culture—including a few gems from Knight’s personal collection (including signed Picassos!). There’s also a cozy covered patio with lawn games and a fireplace—perfect for Houston’s not-so-chilly evenings.

Flavor with Flair

Chef Bryan Caswell brings serious culinary star power to Latuli, and his influence is unmistakable. A James Beard Award semifinalist and former Food & Wine “Best New Chef,” Caswell made his mark with iconic Houston spots like Reef and El Real Tex-Mex. At Latuli, he leans into his deep Gulf Coast roots while exploring global techniques, creating a menu that feels both nostalgic and refreshingly inventive. He’s known for championing local ingredients and telling stories through food—and this new chapter feels especially personal. “This is my food. This is my home,” Caswell said. “Latuli is where it all comes together.” From snapper tiradito with lemon catsup to house-made orecchiette with sausage, every dish tells a layered story.

Highlights include:

  • The Double Dip: smoked redfish dip + pimento cheese = yes, please.
  • Shiner Bock Mussels (a nod to Reef)
  • Rock Shrimp Puffy Tacos and Barbacoa from his El Real days
  • Roman Holiday Pasta, dishes that bring comforting Italian classics with a Texas twist

And let’s not forget the steak—sourced from local ranches including the Knight family’s very own Rafter K. This menu is bold, thoughtful, and delightfully Texan.

Latuli’s beverage program is just as curated as the food. With a 100-bottle wine list focused on sustainable and family-run producers, and a cocktail list that balances freshness with finesse, you’ll want to linger long after dessert.

We especially loved the Pét-Nat Rosé from Texas’ own William Chris Vineyards and the Basque-region Rubentis Txakolina—light, vibrant, and the perfect pairing for Caswell’s seafood-forward starters.
